The Nizhny Novgorod Bread company submits the concept of a product, essentially new to our country, – fresh pancakes.
The consumer buys in shop not frozen, and a fresh product. Traditional round pancake to which Russians got used long ago, a dish universal. It can be eaten at once, having opened packing, and it is possible to turn into various snack, having filled with both sweet, and not sweet stuffings (sour cream, caviar, cheese, paste, etc. )
Productivity of the pancake line reaches 6 - 11 thousand piece/hour. The complete set provides - existence as main technological modules (a batch, giving and dispensing of the test, uniform frying from two parties on pig - iron zharochny surfaces), and branches to stations of drawing various stuffings (fruit jelly, chocolate weight, jam, etc. ). It is important to note that dough is served evenly special doses like "souls", and preparation is baked from two parties consistently on two zharochny tables. Use of gas heating and a working surface from cast iron allows to maintain on a table surface uniform heat in 300 degrees, pancakes turn out just the same as though they were done on a house frying pan. Finished products are piled by means of the special pneumatic device, with turning or without. Products if necessary can be calibrated on the weight, thickness and even on pastries drawing.
The pancakes created in a pile with the set number of pieces are served on packing. The usual "breathing" food wrap provides storage of the baked products without loss in quality till 10 days. If to apply special packing materials or to place a ready - made product in the inert gas environment, duration - storages of pastries sharply increases. A lot of things depend on thickness of pancake and contained in it moisture. The product less water is thinner, the periods of storage – till 1 month are more long (at the same time the role of natural preservatives is carried out by the salt and sugar entering a compounding). That the fresh product remained without freezing about 3 months, it is recommended to mix special food additives with an index "E" into dough.
The round pancakes, ready to the use, produced in the industrial method can be positioned absolutely differently, than products from a test strip. There is an opportunity to let out essentially new product.
