The sugar beet (Beta vulgaris) belongs to family
Goosefoot family (Chenopodiaceae). The root system of adult plant of sugar beet consists of reinforced main root and dense network of the thin root branchings departing from main root in the arrangement plane cotyledon and getting on depth to 2,5 m, and in width on 40 — 50 cm in both parties. The main root, or root crop, sugar beet has the cone-shaped extended form and is a little squeezed from sides. Distinguish root crop head (the shortened stalk) which entirely develops over surface of the soil and bears leaves; neck (hypocotyl, or subcotyledonous knee) — the part of root crop which does not have leaves and lateral roots; and actually root — the lower, usually conic part of root crop on which the lateral roots located in two longitudinal rows are formed. From the total length of root crop 15 — 30% are the share of share of head and neck, its other part represents actually root.
